Dark Chocolate Scotcheroo Protein Bars (RECIPE)

You’ve probably heard of protein shakes, protein smoothies, and protein bars. But have you ever heard of protein scotcheroos?

I, for one, was getting a little tired of the usual protein smoothie.

I am not usually a fan of packaged protein bars as I think they taste chalky and a little weird. These were far from it. So incredibly delicious, plus you get the added protein.

With being as active as I am, I try to get as much protein in my diet as possible to help repair the wear and tear running and dancing do to my body. EAS Whey Protein Powder makes sneaking extra protein into my diet super easy.

INGREDIENTS

  • 4 scoops or approx 1 c EAS® 100% Whey Vanilla Protein Powder
  • 1 c sugar
  • 1 c light corn syrup
  • 1 1/2 c peanut butter
  • 1 bag semi-sweet chocolate chips
  • 6 cups toasted rice cereal

DIRECTIONS

  1. Bring the sugar and corn syrup to a slow boil over medium heat on a stove top.
  2. Remove from heat and add the peanut butter.
  3. Once the peanut butter is completely melted, stir in the protein powder until well combined.
  4. Add the peanut butter mixture to the rice cereal and stir until well combined.
  5. Using caution (the mixture is still pretty hot) press the rice cereal and peanut butter mixture into a greased 9×9 inch dish or pan.
  6. Melt the bag of chocolate chips. My favorite method is in the microwave, just make sure you check it every 30 seconds so you don’t burn them. I learned that the hard way. After your chocolate is melted, pour it over the rice cereal bars in the dish or pan.
  7. Let them set or cool before cutting and serving. I cut mine into approx 1 inch sized bars. Eat and enjoy!

It’s amazing what you can do with protein powder, the possibilities are practically endless!
