Homemade Dairy-Free Pumpkin Spice Coffee Creamer Recipe
With a day job (blogging), a night job (dance teacher), an almost all the time job (helping run the dance studio/account managing), being a mom and trying to also be a “homemaker” with a semi-clean house, I can not (I REPEAT) CAN NOT survive without my coffee. If you see me walking into the dance studio without a coffee cup in hand, something is terribly wrong (kidding).
I try not to succumb to the temptation to go through the coffee shop drive-thru every day before dance. For one, it’s EXPENSIVE. For two, I’m sure my “skinny caramel latte” isn’t the best for me. For those times that I plan ahead, I like to use Dixie® To Go cups.
I love these because I am TERRIBLE at remembering to bring my empty coffee thermos home with me. It either ends up sitting in the studio for a few days or in my car. They rarely make it back to the sink on time. Tell me I’m not the only one who ends up with a stockpile of empty, dirty coffee thermoses in their car…
With the Dixie® To Go cups, I can just toss it in the trash when I’m done downing my coffee. No effort, no clean up, no worries. I’ve got enough to focus on with getting my teams ready to crush it at our competitions next spring!
I also love to bring these with me when I travel for dance competitions. Hey, it’s tough to leave the hotel extra early to wait in line for coffee when you’ve got dancers counting on you arriving at 6:30 AM. Thank you, Dixie, for the extra 15 minutes of sleep 😉
I like my coffee to be burn-your-mouth HOT. These cups have an insulated layer so that the cup doesn’t get too hot to hold. I also appreciate the spill-resistant lid when I’m sipping away during my commute to the studio so that I arrive partially caffeinated.
Since it’s fall, and everyone knows what fall means to coffee lovers (pumpkin spice season!) I’m jazzing up my regular coffee with a little pumpkin spice creamer. I’m not a huge fan of store-bought creamers, some of them taste like chemicals to me. I found a recipe for homemade pumpkin spice creamer that sounded DELISH. I took it a step further and made it even more healthy with dairy-free milk.
Healthy Dairy-Free Pumpkin Spice Coffee Creamer
INGREDIENTS
- 1 1/2 cup dairy-free milk (I used one that was also nut free)
- 2 T pumpkin puree
- 2 T pure maple syrup
- 1 tsp pumpkin pie spice blend
- 2 cinnamon sticks
STEP ONE
In a small saucepan, mix together the dairy-free milk, pumpkin puree, maple syrup, and pumpkin pie spice over medium heat until they blend together.
STEP TWO
Once the mixture is well blended, throw in the cinnamon sticks and bring to a boil stirring constantly. Watch it closely so that it doesn’t boil over.
STEP THREE
Once the mixture boils, remove from heat and let it sit until it cools. Remove the cinnamon sticks and dump it into your container of choice. I used a small glass bottle.
This creamer isn’t as rich as normal creamers (which I like!) so you might need to use more than you normally would with your coffee to achieve your desired taste. The mixture should keep for up to a week in the refrigerator. Just make sure to give it a good shake to remix the ingredients before using.
