I can’t believe it’s gluten-free: 7UP TEN biscuits.

As you may or may not know I went totally gluten-free, for health reasons, in January. Since then I have introduced a bit of gluten back into my diet, but I continue to cut out as much gluten as possible from what I eat. I get a kick out of cooking for people, and then surprising them with the fact that what they’re eating is gluten-free after they rave about it. We were planning on getting together with some friends last weekend, so I knew this would be the perfect opportunity to test this recipe out. So, off to Walmart I went for some Ten 7UP and a few other ingredients.

This is now one of my favorite recipes for a healthy, gluten-free alternative to the typical biscuit. I have tried other recipes made with regular 7UP, but these had the same full flavor with Ten 7UP, which has less calories. Gluten-free AND less calories, I’m pretty much a genius. Also, there are only four ingredients to make these so they’re super easy and incredibly delicious.

Ingredients:

  • 1/2 cup Ten 7UP
  • 2 cups gluten-free Bisquick
  • 1/2 cup sour cream
  • 1/4 cup Butter

Measure out your Bisquick and dump into a small mixing bowl. If you have a pastry cutter, that would come in handy for this next step. I do not, so I used a butter knife to “cut” the sour cream into the Bisquick.

Measure out 1/2 cup of your Ten 7UP with a liquid measuring cup.

Pour the Ten 7UP into the Bisquick/sour cream mixture. Yes, it will bubble, this is normal. Mix by hand until just blended. Remember that this is biscuit dough and not bread dough, so the less you work with it the better.

Spread some of the Bisquick mixture on a cutting board or, in my case, a counter. Manipulate the dough until it’s the size of your baking dish (9 x 9 inches). The dough will be crumbly. Again, the less you work with the dough, the better.

Melt your 1/4 cup of butter and then pour into your 9 x 9 inch baking dish. Cut your dough into squares.

Place the dough squares in the dish on top of the melted butter. Bake at 450 degrees for 17-20 minutes or until slightly golden brown on top.

Would you look at that flaky, warm, delicious goodness? How did our friends react to them? The verdict is in: no one had any idea they were gluten-free and less calories than the typical biscuit! Now I’ve got the itch to try making soda cupcakes with Ten Sunkist…
