Copycat Costco Turkey Roll Ups (RECIPE)

Any parent of an active kid can agree, it’s just not a summer day without a trip to the park.

Kids need time to play and burn off energy, get some fresh air, feel the sunshine on their skin.

I need the fresh air and the sun on my skin just as bad. Seasonal affective disorder is a real thing for us Minnesotans! Just don’t forget to bring the Banana Boat sunscreen 😉

Now that Bean is a little older, we’re starting to have picnics during our daily park trips. Sometimes I like to jazz it up a little and get outside the typical “PB&J” box.

Last summer when I was looking for easy foods to bring with for a day out on our pontoon, I discovered a recipe for copycat Costco turkey pinwheels. If you’re lucky enough to have a Costco close by and you’ve tasted them before, you’ll understand how excited I was to learn how to make my own.

This recipe is too good to keep to myself, here’s how you can make your own:

COPYCAT COSTCO TURKEY ROLL UPS RECIPE

INGREDIENTS

  • 10 inch flour tortillas
  • Romaine lettuce, torn into bite sized pieces
  • 8 oz. low fat cream cheese, softened
  • 1/2 cup whole berry cranberry sauce
  • swiss cheese slices, cut in half
  • deli turkey slices
  • optional: tomato slices (I can’t stand tomatoes, so I left them out)

DIRECTIONS

  1. Mix together the cranberry sauce and cream cheese until well combined.
  2. Spread a generous amount of the cranberry/cream cheese mixture over one entire tortilla.
  3. Layer 2 halves of swiss cheese, 4 pieces deli turkey slices, and a few pieces of the romaine lettuce down the middle of the tortilla.
  4. Starting from the outside, roll up the tortilla tightly. The cream cheese should help hold it shut. Then, cut into bite-sized pieces.

These are my favorite to bring on any picnic, whether it’s at the park or for a day out on our family pontoon! They’re super easy to eat, and not to mention incredibly tasty.

I just pack them up along with our typical park staples: our picnic blanket, napkins, juice boxes, fresh berries of any kind, the car of the day that Bean insists on bringing along, and our Banana Boat® SunComfort™ Clear UltraMist® Sunscreen.

I love this sunscreen because park (and beach) sand doesn’t stick to your skin, it easily rubs off. Plus it’s water resistant for up to 80 minutes which is perfect for our day-long pontoon outings.

Once you have a little one with sensitive skin to worry about, you start to take sunscreen more seriously. This stuff gives me peace of mind so that we can have hours of family fun in the sun without worry.

And trust me, our family takes outdoor fun in the sun seriously!
